This homemade banana bread is super moist and filled with taste, and it makes a wonderful sweet treat for any occasion. Why do I love it? Because it’s oh-so-filled with the sweetness of bananas and easy and fast to make. It will last you long (unless you can keep it away from sweet teeth!)
How many times have I needed a delicious treat to bring to a picnic, a hike, or as a snack in my daughter’s lunch bag? Countless times. Needing to bake something quickly, combined with often having riped bananas left over, made banana bread my favorite of all times!
There is an ocean of banana bread recipes available, and I have tried many. This one is my favorite because I love the moistness and the secret is the riped bananas and how you mush them! Moreover, most recipes call for 1-2 bananas and white granulated sugar. I wanted something with lower sugar content and instead used the sweetness of the bananas. I replaced the granulated sugar with a reduced amount of brown sugar and added more bananas. The result was heavenly!
How to Make this Super Moist Banana Bread
When it comes to banana bread, moisture is everything. What makes the difference is the ratio of flour to the banana. To me, the importance is that the bread is juicy, and I favor using many bananas. You have to be careful though not to add more than the recipe calls for, as it can make your bread heavy and damp.
1) Pre-heat the oven – Adjust the oven rack to the mid position and pre-heat the oven to 350°F/175°C.
2) Mush the bananas – Peel your overripe bananas and mush them with a fork in a large bowl. It is ok to leave some lumps from the bananas, as a matter of fact, I prefer to leave some as it will give some additional juiciness to the bread. You can use your electric mixer to mash bananas if you want a more even batter. Start with slow speed and gradually increase to medium-high speed and stop once the bananas are all mashed.
3) Prepare the mixture – Melt the butter and mix in the bowl with the mashed bananas. Add the eggs, brown sugar, and cinnamon. Stir the mixture together.
4) Add the dry ingredients – Mix the flour and baking powder and add to the wet ingredients. Gently stir it together, until you have an even mixture. Again, it does not matter if there are banana lumps in the batter, they will make the bread juicy!
5) Prepare for baking – Pour the batter into the baking form. The best is to use a non-stick or silicone loaf pan. This shape will give an easy-to-slice bread! Take half of the banana that you left and cut it into slices. Decorate by placing the banana slices on the mixture.
6) Bake it – Place the loaf pan in the oven for 60 minutes. Check for readiness by using a toothpick or any thin skewer. If you insert it into the center of the bread, and it comes out clean or with a few small crumbs, it is ready. Once baked, leave it to cool down before you slice it up and serve. Banana bread is best eaten cold!
Tips & Variation
When it comes to banana bread, it is super easy to make, yet some tips can make your bread make it or break it!
- Always use ripe bananas. They are sweet, soft, and easy to mash. You know if a banana is ripe when it is yellow with brown spots, and it is soft.
- Don’t use a high-speed blender to mash your bananas or the mixture. You will love that the batter is not over-mixed.
- Eat when it has cooled down! Banana bread is best served cold. That is what makes it great, as you can put it in the fridge and enjoy it several days after.

Fit For King – Super Moist Banana Bread
Ingredients
- 75 g butter, (melted)
- 2 eggs, (medium sized)
- 100 g brown sugar
- 3 bananas, (use ripe bananas) #note 1
- 1 tsp cinnamon
- 200 g all purpose-flour
- 1 tsp baking powder
Instructions
- Pre-heat the oven to 350°F/175°C.
- In a bowl, mash 2 1/2 bananas (leave half of a banana for decoration).
- Melt the butter and mix it with the bananas.
- Add the eggs, brown sugar, and cinnamon and stir together until combined.
- Mix the flour and baking powder and add to the wet ingredients. Gently stir it together, until you have an even mixture.
- Pour the batter into the loaf form.
- Slice up the remaining half banana and decorate the batter.
- Place the form in the oven and leave it to bake for 60 minutes. You can check the bread's readiness by inserting a toothpick into the bread. If it comes out clean it is ready!
- Remove the banana bread from the oven and allow it to cool completely before slicing and serving. Enjoy!
- If you have some bread left over, you can cover it in tin foil and place it in the fridge for up to 3-4 days.
